Faux Fried Chicken

What words do you think of when you hear "Fried Chicken?" Crunchy, moist, flavorful... baked?  Today's recipe takes normally unhealthy fried chicken and makes it healthy without sacrificing "crunchy," "moist" or "flavorful."

The How-To

  1. PREHEAT the Oven to 410 degrees. 
  2. Pour the BUTTERMILK into a shallow bowl 
  3. Add the ONION POWDER, GARLIC POWDER, SEASONED SALT and SEASONED PEPPER to the bowl of buttermilk. Mix until evenly distributed. 
  4. Dump the CORNFLAKES into a second shallow bowl. 
  5. Crush the cornflakes. I use my fingers. 
  6. Add the onion powder, garlic powder, seasoned salt and seasoned pepper to the bowl of cornflakes. Mix until evenly distributed.
  7. Using tongs, dip a CHICKEN TENDER into the bowl of buttermilk. Flip to coat both sides. 
  8. Transfer it to the bowl of cornflakes. Flip to coat both sides. 
  9. Place in a glass pan lined with aluminum foil.
  10. Repeat for remaining chicken tenders.
  11. Put the chicken tenders in the preheated oven for 40 MINUTES
Serve with a yummy side and veggies for an excellent dinner.  Each chicken tender is 2 PointsPlus and 87 calories, giving you the flexibility to eat however many fit in your plan for the day.
